No-Bake Monster Cookie Oatmeal Energy Bites

These No-Bake Monster Cookie Oatmeal Energy Balls will feel like a special treat but are actually a healthier alternative for after-school snacks.

The peanut butter not only is delicious but it is packed with protein and helps to keep those afternoon hunger pains away. And the kids are kind of fooled by the chocolate, so they think it’s a treat.

And I guess it is mostly a treat, but it does have healthy oats and protein-dense peanut butter in there.


INGREDIENTS

  • 3 Cups Quick Oats
  • 1 Cup Peanut Butter smooth
  • ½ Cup Honey
  • ⅓ – ½ Cup Mini M&M’s Candy

INSTRUCTIONS

  1. In a small mixing bowl, combine all ingredients and mix well.
  2. Roll into balls and set on a baking sheet (use a silicone baking mat or wax paper to keep them from sticking.)
  3. Refrigerate for about an hour.
  4. Store in an airtight container.
  5. Great after-school snack for the kids!

TIPS

  • If the dough is super sticky, place the mixed dough into the refrigerator for about 30 minutes before rolling them into balls. They will go together much easier and not be as sticky on the hands!
  • If you want to make them healthier, you can leave out the M&M’s and replace them with peanuts, chia seeds and/or flax seeds. There are lots of options!
  • If you place your energy bites in a container in the fridge, you can keep them for about a week. If you freeze them, you can keep them for up to three months!
  • Once you roll the balls, place them on a cookie sheet and place them in the freezer for about 1-2 hours. After they are frozen, place them in either an airtight container or a zip lock bag and keep them in the freezer until you are ready to eat them.

    This is a healthy snack and oh so yummy. My kids love it…only way to get them to eat oats. Hmmm, adding the mini m&ms is a great twist. Will definitely add that in the next time we’re making this treat.
