Anti-Inflammation Soup

We were looking for a simple winter soup recipe and we found one that really was as easy as it looked. Not only did it taste good and it was easy to prepare, but it was also packed with goodness.

This soup recipe contains two powerhouse ingredients; turmeric and ginger, both known to help with a variety of concerns such as:

  • Pain-Relief: Curcumin, the superstar anti-inflammatory compound in turmeric, has been found to help relieve the symptoms of painful inflammatory diseases, like arthritis and colitis.
  • Anti-Inflammatory: Individually, ginger and turmeric both have impressive anti-inflammatory benefits.
  • Stomach-Soothing: Ginger is a well-known home remedy for nausea because Gingerol, the antioxidant compound in ginger, communicates with the serotonin (aka the “feel good” chemical) receptors in your brain to help relieve discomfort.

RECIPE

INGREDIENTS:

  • 1 onion
  • 6 carrots
  • 1 head of garlic
  • 2 pinkie size nubs of ginger
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 2 cups of water or vegetable stock
  • Salt and pepper to taste
  • Olive oil

STEPS:

1. Clean and chop the carrots, boil for 10 minutes to soften, and reduce oven time.
2. Chop top of garlic bulb off and place as in in an oven dish along with the carrots and onion. Drizzle with olive oil, salt, and pepper.
3. Place in oven on 220 degrees for 30 minutes.
4. Once the onion and carrots are soft, place into a blender. Squeeze the soft garlic into the blender along with the ginger, turmeric, and cumin.
5. Add only 1 cup of water or vegetable stock and blend.
6. Slowly add the other cup of water or vegetable stock until the desired consistency is reached.

    so decieded to make this soup,and oh boy was i so happy,i love ginger and its a warm ginger taste,hubby had a small tummy bug and he said this really made his tummy feel so much better,this is going into my home cookbook.
