Cosy Lentil Soup [Budget Friendly Meals]

Now that we’re all starting to feel Winter a little more we thought this would be the perfect tie to share some cosy warm soups for the family – and budget friendly family meals.

This delicious hearty soup might be meat free BUT its still packs a generous serving of 9g of protein per 100g, and take a look at the comparison of 100g of lentils vs 100g of mince, you are not only saving money but it’s better for your health too.

Now back to the recipe! This simple, quick recipe serves 2 – so double up if you cooking for 4. Watch the easy steps below and scroll further down for the recipe:

Ingredients
• 1 medium onion chopped
• 1 medium carrot chopped
• 1 half celery chopped
• 1 small potato chopped
• 1 cup washed red lentils
• 1 smoked chili and tomato stockpot (you can leave this out if you prefer)
• 2 minced garlic and 1 tsp ginger
• Seasoning: 3/4 tsp salt, pepper, parsley, paprika
• Hot water 300ml
• 1 bay leaf
• 3 tbsp oil

Method:
• Heat the oil in a pan and fry the onions, then add bay leaf, ginger and garlic. Mix and cook 1-2 minutes
• Add chopped vegetables, seasoning, washed lentils, stock and water.
• Bring to a medium boil after 25 minutes and check consistency to add more water.

Serve and enjoy!

    Yes I will be trying this Cosy Lentil Soup over the weekend as my family Loves any kind of soup all year round and would be a nice addition. Oh yes its that time of the year for hearty soups to keep warm from the inside.
