Peppermint Tart Recipe [Nadine Smallberg]

Nadine Smallberg is a mum of 2, has a parenting blog (and an award-winning one at that #sapbawards), is a featured photographer, and an IT teacher.

As if she didn’t have enough on her plate she also creates delicious recipes that are a healthier take on some of our favorite dishes (Yes please!)

When Nadine created this recipe she specifically worked out the calories for a decent serving because she (like most of us) really believes we should have a balance with our meals and not deprive ourselves of what we love and what tastes good.

Which we 100% agree with! (This recipe per 100 serving is only 247 Calories)

So naturally when we were scrolling on Instagram and saw this Peppermint Tart recipe we had to ask Nadine if we could share it on our Mumbox magazine for our mums to try!

INGREDIENTS:

* 500ml cream
* 1 tin caramel treat
* 5ml peppermint essence
* 5ml vanilla essence
* 85g peppermint Aero slab
* 200g Tennis biscuits

METHOD:

1. Beat the cream until it forms soft peaks.
2. Add the caramel and essence and continue to beat till everything is combined.
3. Stir in a 3rd of the aero. Either grate or crumble it. If you stored the aero in the fridge it’s best to grade it, I prefer to crumb it so you get chunks of the choc when eating the tart.
4. Layer the biscuits and tart mixture. You can either layer the biscuits dry or dip them in water and then layer or crumb them and create a layer. Wetting the layer allows the biscuit to form a nice crust, it depends on your preference.
5. Crumble or grate the remainder of the choc on top.
6. Refrigerate for 3 hours or preferably overnight. (Rr, wait like us for 3hours exactly and then enjoy 😉

    This is actually a great peppermint tart. I’ve always made it with a peppermint crisp bar but I much prefer this one with the Aero peppermint chocolate. This is my new favorite. Thanks to Nadine 😋
