Rice & Beans [Budget Friendly Family Meals Under R100]

Most of the ingredients can already be found in the cupboard – which means you most probably will only need to buy a can of black beans which costs around R15.

SERVINGS: 6 servings

INGREDIENTS

  • ¼ cup extra virgin olive oil
  • 1 medium onion diced
  • 1 large bell pepper diced (any color can be used)
  • 2 garlic cloves minced
  • 1 tsp.ground cumin
  • ¼ tsp. red pepper flakes (can be left out if desired)
  • 1 can of diced tomatoes
  • 2 cups long-grain brown rice
  • 4 cups vegetable broth
  • 1 can of black beans, rinsed
  • A handful of coriander chopped (optional)

INSTRUCTIONS

  1. In a large pot sauté the onion in olive oil for about 3-5 minutes. Add the red pepper and cook for another 3-4 minutes.
  2. Add the garlic, cumin, and red pepper flakes. Cook for a minute.
  3. Add the diced tomatoes and keep cooking, stirring occasionally for 5 minutes.
  4. At this point, add the rice and veggie broth. Stir everything well and bring to a boil. Cover with a tight lid, reduce the heat to low, and simmer for about 45 minutes,* or until the rice is cooked through.
  5. Stir in the black beans and cilantro. Let it rest for 5 minutes. Serve.

RECIPE NOTES:

What kind of rice is best for Rice and Beans?

It is best to use long-grain white or brown rice in this recipe. White Jasmine rice and Basmati would work really well, too.

Whichever rice you choose, read the suggested cooking time and water-to-rice ratio, and adjust this recipe accordingly.

About the Beans

Kidney beans can also be used instead of black beans. You can buy canned beans or cook them yourself.

If you buy canned black beans, don’t forget to rinse them before adding them to the pot.
